Ingredients
2 oz pasta, cooked
1/2 small beefsteak tomato
1/2 avocado
1 tbsp extra virgin olive oil
1 oz fresh mozzarella
1/2 cup basil, chopped
1.5 tsp salt
1 tsp cracked black pepper
2 tsp red pepper flakes (optional)
Directions
Cook pasta according to box directions. I used Barilla protein rotini.
Chop up avocado, tomato, and mozzarella into bite sized pieces
Toss pasta with avocado, tomato, mozzarella, chopped basil, olive oil, and seasonings.
I wouldn't advise making this more than one day in advance. If you want to meal prep this, I would cook all of the pasta ahead of time but add everything else in day of.
