California Caprese Pasta Salad

Ingredients
  • 2 oz pasta, cooked

  • 1/2 small beefsteak tomato

  • 1/2 avocado

  • 1 tbsp extra virgin olive oil

  • 1 oz fresh mozzarella

  • 1/2 cup basil, chopped

  • 1.5 tsp salt

  • 1 tsp cracked black pepper

  • 2 tsp red pepper flakes (optional)

Directions
  1. Cook pasta according to box directions. I used Barilla protein rotini.

  2. Chop up avocado, tomato, and mozzarella into bite sized pieces

  3. Toss pasta with avocado, tomato, mozzarella, chopped basil, olive oil, and seasonings.

I wouldn't advise making this more than one day in advance. If you want to meal prep this, I would cook all of the pasta ahead of time but add everything else in day of.
