Ingredients
2 cups all-purpose flour
Zest from 2 oranges
1/2 tsp salt
1 cup unsalted butter (at room temperature)
1/2 cup white sugar
1/4 cup light brown sugar
1 egg
1 tsp vanilla extract
1 cup sweetened coconut
1/2 cup Ghirardelli dark chocolate melting wafers
1 tsp coconut oil
Directions
Preheat oven to 350 F.
Combine flour, orange zest, and salt in a large mixing bowl.
If using butter sticks, dice into pats. Mix butter in.
Mix in sugars until mixture looks like damp sand.
Add the egg and vanilla and beat until combined.
Fold in coconut flakes.
Roll cookie dough into 2 logs, about 1 inch across in diameter.
Wrap in plastic wrap and refrigerate for at least 2 hours.
Slice cookie dough into 1/4 inch slices and place on baking sheet lined with parchment paper.
Bake for about 16 minutes until golden brown on edges. Allow to cool completely.
Add chocolate wafers and coconut oil to small microwaveable bowl.
Microwave in 10 second intervals, stirring in between, until fully melted.
Use a tablespoon to spoon melted chocolate over half of each cookie.
Place cookies on a baking sheet and refrigerate for at least 30 minutes.
Makes about 30 cookies.
