15-minute Salmon Bowls

Ingredients

  • 2 tbsp Trader Joe's Soyaki Marinade

  • 1 tsp Sriracha

  • 4 oz salmon filet

  • 10 baby carrots

  • 1/2 small cucumber

  • 2 tbsp Kimchi

  • 1 avocado

  • 1 cup jasmine rice

Directions

  1. Place salmon filet on a cutting board with the skin side facing down. Cut into cubes.

  2. Toss cubes of salmon with soyaki sauce and sriracha. Allow to marinate for at least 30 minutes and up to 4 hours.

  3. Preheat air fryer to 400 F. Air fry salmon for 7 minutes, flipping halfway through.

  4. Place rice in a medium pot with 1 1/4 cup of water. Bring to a medium simmer uncovered, then cover, reduce heat to low, and simmer for 12 minutes.

  5. While the rice is cooking, cut carrots into 1/4 inch slices and dice cucumber and avocado.

  6. Add rice to a medium dinner bowl as the base. Top with salmon, carrots, cucumber, avocado, and kimchi.

  7. Optional: Garnish with a drizzle of soy sauce and sriracha and toasted sesame seeds.

Makes 2 servings. Good in the fridge for 2-3 days.
