Greek Turkey Burgers and Feta Fries

Ingredients

Greek Turkey Burgers

  • 1 lb ground turkey

  • 1/2 small, red bell pepper

  • 1/2 small cucumber

  • 1/3 small red onion

  • 2 tbsp dill

  • 2 serrano peppers (optional)

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • salt and pepper to taste

  • 1 tbsp garlic-infused olive oil (or sub oil of choice)

Feta Fries

  • 2 tbsp avocado oil (or sub oil of choice)

  • 2 large russet potatoes

  • 1/3 cup feta

  • 2 tsp za'atar

  • 1 tbsp garlic powder

  • 1 1/2 tsp cayenne pepper

  • 1 tbsp salt

  • 2 tsp cracked black pepper

Other

  • Tzaziki (I love the Whole Foods one!)

Directions

Greek Turkey Burgers

  1. Chop up bell peppers, cucumber, serrano pepper, and onion into small chunks.

  2. Mince dill finely.

  3. Add turkey meat, minced dill, chopped vegetables, garlic powder, onion powder, and salt and pepper to a large mixing bowl.

  4. The ickiest part - Use a spatula or your hands to combine evenly.

  5. Add garlic-infused olive oil to a large frying pan and heat to medium.

  6. Form five patties out of the turkey meat mixture and add to the pan once oil has warmed.

  7. Allow to cook for about 5 minutes per side.

Feta Fries

If you want, you can peel the potatoes (I did). Or you can keep the skins. Whatever floats your boat.


  1. Preheat oven to 400 F.

  2. Cut potatoes into quarters lengthwise.

  3. Cut each quarter into slices by placing the quarter inside down on the cutting board and cutting perpendicular to the board. (See very messy hand drawn diagram above lol)

  4. Place potato slices in a large mixing bowl and fill with cold water.

  5. Stir the potatoes around in the water and then drain.

  6. Refill the bowl with cold water and allow the potatoes to soak for at least 30 minutes, then drain and pat as dry as possible.

  7. Dry the bowl, then add potatoes back. Add oil and seasonings (not the feta) and toss with tongs to combine. (Do this quickly - the longer the fries sit, the more the salt witll draw out moisture and make them soggy)

  8. Bake at 400 for 25 minutes on a large greased baking sheet, flipping halfway through.

  9. Remove from the oven and top with crumbled feta. Bake for an additional five minutes.

Will last in the fridge for 4-5 days. To re-heat, put on a baking sheet in the oven at 250 for about 15 minutes. Pair with as much tzatziki as your heart desires and a side salad if you're feeling healthy.
