Italian Sausage and Peppers

Ingredients
- 5 sausages of choice (I used TJ's sweet Italian style chicken sausages) 
- 1 red bell pepper 
- 1 green bell pepper 
- 2 garlic cloves 
- 1 yellow onion 
- 2 tbsp olive oil 
- 1 tbsp red pepper flakes 
- Salt and pepper to taste 
- 1 can fire roasted diced tomatoes 
- 1 tbsp balsamic vinegar 
- 1/2 cup fresh basil 
Directions
- Heat a large sauté pan with 1 tbsp olive oil over medium high heat. 
- Slice sausages into 1 inch coins and cook according to package directions, stirring minimally to allow the coins to sear. 
- Meanwhile, slice up bell peppers and onions into long strips and mince garlic cloves. 
- Remove sausage coins from pan. Cook bell peppers and onions in remaining oil until onion turn translucent (about 7 minutes), stirring frequently. 
- Add minced garlic and allow to continue sautéing with minimal stirring until bell peppers are slightly charred around the edges. 
- Deglaze the pan with balsamic vinegar, scraping at any brown bits in the bottom of the pan. 
- Add tomatoes and seasoning, reduce heat to medium, and allow to cook while covered for 10 minutes. Only stir once or twice. 
- Chop basil and fold into the sausage and peppers, then remove from heat. 

Makes 5 servings and lasts 4-5 days in the fridge. To reheat, remove desired portion and microwave for 2 minutes, stirring at 1 minute increments. Pairs well with garlic bread, mashed potatoes, or pasta.
