Mediterranean Bowls (or plates)

Ingredients

  • 1 package Trader Joe's chicken Shawarma

  • 1 pint cherry tomatoes

  • 2 persian cucumbers

  • 1/3 cup of crumbled feta

  • 1 container garlic hummus

  • 2 pieces whole wheat pita

  • 2 tbsp za'atar

  • 2 tsp garlic powder

  • 4 tsp olive oil (2 for cherry tomatoes, 2 for pita)

  • salt and pepper to taste

Directions

  1. Preheat oven to 425 F.

  2. Dice chicken shawarma filets.

  3. Toss cherry tomatoes with olive oil, 1 tbsp za'atar, and salt and pepper.

  4. Bake at chicken shawarma and cherry tomatoes at 425 F for 20 minutes, flipping half way through.

  5. Brush each pita with olive oil on both sides. Sprinkle with garlic powder, salt and pepper, and remaining za'atar.

  6. Slice each pita into 8 pieces and air fry at 325 F for 8 minutes, flipping half way.

  7. Dice cucumbers.

  8. After cherry tomatoes come out of the oven, toss with diced cucumbers and feta.

  9. On a plate, add 1 spoonful of greek salad, 2-3 oz of chicken, and 2 tbsp hummus.

Makes 4 servings. To jazz up your hummus, use a spoon to make a divot in the hummus and drizzle w olive oil and za'atar.
