Ingredients
½ cup greek yogurt (I use plain but you can use vanilla flavored for added sweetness)
1 egg white
2 tbsp milk of choice
½ cup all-purpose flour
½ cup of blueberries
2 tbsp honey
1 tsp cinnamon
Directions
Preheat the oven to 350 F.
Combine yogurt, egg white, and milk thoroughly.
Slowly, mix in flour in small increments.
Mix in honey and cinnamon.
Fold in blueberries.
Grease a muffin tins with canola or vegetable oil
Spoon in batter and bake 30 - 35 minutes or until edges are pulling away from the edges of the pan.
Broil for 2 minutes for a golden brown crust.
Makes 4 servings. To store, I just keep this wrapped in aluminum foil in the fridge and slice and eat it cold. You can also put your slice in the microwave for 10-15 seconds and top with whipped cream, nuts, extra yogurt, etc.
