Ingredients
½ can pumpkin puree (about 8 oz)
1 cup milk of choice
1 tsp pumpkin pie spice
½ tsp salt
¼ cup chia seeds
½ cup vanilla protein powder (optional)
1 tbsp vanilla
Directions
Blend all ingredients except chia seeds together.
Add 1 tbsp of chia seeds to each of 4 mason jars (or other containers).
Add 1/4 of the blended ingredients to each mason jar and stir to combine with chia seeds.
Refrigerate for at least four hours or preferably overnight.
Makes 4 servings. I like to top this with almond butter, whipped cream, and slivered almonds. Also sometimes raspberries or strawberries.
