Pumpkin Chia Pudding

Ingredients

  • ½ can pumpkin puree (about 8 oz)

  • 1 cup milk of choice

  • 1 tsp pumpkin pie spice

  • ½ tsp salt

  • ¼ cup chia seeds

  • ½ cup vanilla protein powder (optional)

  • 1 tbsp vanilla

Directions

  1. Blend all ingredients except chia seeds together.

  2. Add 1 tbsp of chia seeds to each of 4 mason jars (or other containers).

  3. Add 1/4 of the blended ingredients to each mason jar and stir to combine with chia seeds.

  4. Refrigerate for at least four hours or preferably overnight.

Makes 4 servings. I like to top this with almond butter, whipped cream, and slivered almonds. Also sometimes raspberries or strawberries.
